Continuing our series of easy and delicious recipes by introducing 2 ingredients brownie. You will be amazed at how easy this recipe is. There are still ways to make it wrong so let’s have a look at the nuances in detail. Firstly – you will need to prepare eggs by warming them up (if you keep them in the fridge) to room temperature. At this temp (~20-23 °C / 70-75 °F) whipping properties of egg proteins are the best. You can read a nice article in this regard here. Chocolate has to be melted gradually either on water bath or in the microwave. I prefer microwaving it for 1 min 2-3 times mixing in between each round. I try to keep the chocolate temperature at ~42 ° C / 108 °F. Don’t overheat the chocolate as once you will start adding the eggs you might start denaturation of egg protein (starting at 56 °C / 132.8 °F).
