Continuing our series of easy and delicious recipes by introducing 2 ingredients brownie. You will be amazed at how easy this recipe is. There are still ways to make it wrong so let’s have a look at the nuances in detail. Firstly – you will need to prepare eggs by warming them up (if you keep them in the fridge) to room temperature. At this temp (~20-23 °C / 70-75 °F) whipping properties of egg proteins are the best. You can read a nice article in this regard here. Chocolate has to be melted gradually either on water bath or in the microwave. I prefer microwaving it for 1 min 2-3 times mixing in between each round. I try to keep the chocolate temperature at ~42 ° C / 108 °F. Don’t overheat the chocolate as once you will start adding the eggs you might start denaturation of egg protein (starting at 56 °C / 132.8 °F). Other than that – just follow the instruction steps from the recipe below and you’ll be fine 🙂

2 Ingredients Brownie Recipe

Batter
- 3 Eggs (at room temp)
- 230 grams of dark chocolate
Inclusions
- 70 grams of dark chocolate
Decoration
- 10 grams of drizzled dark chocolate
- 5 grams of grated dark chocolate
Instructions
- Prepare the eggs by warming them up at room temp (approx. 20 °C / 68 °F) for at least 2 hours
- Chop chocolate into small pieces
- Set aside 1/4 of chopped chocolate - you will use it as inclusions at a later stage
- Melt the rest of the chocolate in the microwave.
- Break the eggs into an empty bowl and whip them for 5-8 minutes until soft peaks (see instructions video)
- Combine whipped eggs with chocolate. I suggest you do it gently in thirds. This will allow keeping the structure of the final product well aerated.
- After you mixed in the eggs - the batter should be of creamy texture and easily poor-able.
- Add the chocolate chips and mix them in well.
- Move the batter into a greased tin.
- Bake the brownies at 170 °C / 340°F for approx 30 min until the wooden stick is dry.
- Once the brownie is cooled decorate by drizzling with melted dark chocolate and immediately grate chocolate on top
