I have a question – what’s the easiest and funniest thing to bake over the weekend?! Particularly after the busy week at work when all you want is to land on the sun loungers outside and enjoy a lazy break over the next 3 days of the long weekend. You can argue…All the goods spring in mind – Brownies, Cookies, Cakes, Eclairs or even Cheesecake :). But not today… Having great weather and enjoying cocktails you definitely want something to accompany your drinks well. It has to be refreshing and delicious, sweet but not overly, easy to make, and …. Easy to make :). Today I’d like to introduce Blueberry Lime Muffins – my ultimate choice of weekend desserts. The recipe is quite easy to follow and will take you no more than 1 hour from scratch to having them ready.
To give a zest to the blueberry muffin I’ve added lime juice to the recipe what brings a nicely balanced refreshing flavor and aftertaste.

Blueberry Lime Muffin Recipe

Delicious combination of sweet blueberry with zingy lime, generously drizzled with white chocolate - those are to die for!!
Ingredients
Batter
- 275 grams Plain Flour
- 275 grams Caster Sugar
- 15 grams Baking Powder
- 5 grams Salt
- 150 grams Vegetable Oil
- 75 grams Milk
- 5 Eggs
- 80 grams Blueberry
- 1 Lime
Decoration
- 10 grams White Chocolate
- Zest of 1 Lime
Instructions
- Premix dry ingredients (flour, salt, sugar, baking powder)
- Add all liquids e.g. eggs, oil and milk
- Mix batter until well combined
- Split batter between 2 bowls
- Add blueberries and colourants to the first bowl.
- Mix gently until colour is homogenous
- To the second bowl - add vanilla extract and juice of 1 lime
- Fill the muffin cases with combination of both batters. I’ll leave you to choose the way to combine those
- Using a wooden stick - mix batters in the cases
- Sprinkle with sweet butter crumble
- Bake at 180 °C / 356 °F for 23-25 min (w/o fan)
- Once cooled - drizzle with coloured white chocolate
- Sprinkle with zest of 1 lime
